4 foods must-try in Mai Chau
Mai Chau is a valley inhabited by Thai people just 140 kms from Hanoi. The valley has become more and more popular to travelers dosmetic and international. There are 4 foods must-try in Mai Chau. They are “com lam”, Muong pork, bitter baby bamboo and hill chicken.
1. Com lam
The most typical food in Mai Chau is Com lam. Com lam made from sticky rice but they cook rice in the bamboo pipe. The pipe must be new one which is not so hard. The pipe is baebacued on the fire. The rice is very important ingredient. It is chosen from the hill rice which have good smell when it is done. People eats Com lam with salt sesame and pork.
2. Muong pork
What we eat everyday is normal pork. But in Mai Chau, Thai people has 1 specific kind of pig that could make very good kind of pork that we call “Muong pork”.
We often eat pork which is raised inside the cage. But Muong pigs are growing in the nature. Muong pigs are long hair, long nose, short legs, small size… and less fat than normal ones. Muong pork are favorite foods for Thai people whenever there are honored guests.

3. Bitter baby bamboo
Bitter baby bamboo is very popular in meals of locals here. You just go to the forests to pick the baby bamboo up. It is easy to track where they will grow. locals Thai could made them as sour bamboo or hang them up under the sun to make dry bamboo. But it is often cooked fresh. It is bitter at first but when you keep eating they turn ok and they get much better when you get used to it.

4. Hill chicken
Vietnamese tourists are different. We could work hard, we could save penny but when we enjoy life we do not care much about how much it cost. One of the favorite food is hill chicken. This is special type of chicken that live on the hill and eat the natural foods so the meat could be tough enough to feel the best. The thing you should pay consideration to is that when cook them do not let water boil too long. 5 – 10 minutes is enough then take it out and ready to enjoy with lime leaves and pepper salt.
